Gluten-free Homemade Banana Pudding

Essential Tools and Steps for Gluten-free Homemade Banana Pudding

Disclaimer

These seasonal suggestions are a good starting point, but my real guide comes from the wisdom of our ancestors, which provides the perfect balance of flavors for each dish.

Ingredients

1/2 cup sugar or swerve

1/3 cup gluten-free flour

3 egg yolks

2 cups milk

3 boxes Kinnikinnick Wafers (or more, use your judgment)

5 bananas

1/2 tsp vanilla

dash salt

Directions

Alright, Nolan’s Foodies, let’s put together this banana puddin’ – it’s gonna be divine. First, grab a medium-sized mixing bowl and lay down a layer of Kinnikinnick Wafers. Don’t be shy with ’em, make sure they cover the bottom. Now, slice up a banana and layer those slices right on top of the wafers. We’re building layers of deliciousness here, okay?

Repeat that two more times – another layer of wafers, another layer of banana slices. You got three layers of wafers and three layers of bananas, getting’ all cozy in that bowl.

Now, for the good stuff – the pudding! In a saucepot (or a double boiler if you’re feeling fancy), put in your sugar, flour, egg yolks, milk, and a dash of salt. Remember, let your ancestors guide your hand with the seasonings, chile. Put it over medium-low heat and stir it good with a wire whisk. Keep stirring, don’t you dare let it scorch! We’re cooking this pudding until it’s nice and thick, about fifteen minutes or so.

Take it off the heat and stir in that vanilla extract. Then, pour that warm, creamy pudding right over the wafers and bananas. Let it sit for about five minutes, just long enough for those wafers to soak up all that delicious pudding.

Now, if you’re feeling extra fancy, you can top it with some meringue. But even without it, this banana puddin’ is gonna be heavenly. It’s the perfect comfort food, the kind of dessert that makes you feel all warm and fuzzy inside. Enjoy, sug!
